甘南藏羊肉品质分析

摘  要:
对甘南藏羊肉品质进行了分析,结果表明,甘南藏羊肉蛋白质含量达22.45%,脂肪含量2.94%,矿物质总量410.046 4 mg/kg其中Cu 2.886 0 mg/kg、Fe 2.044 4 mg/kg、Zn 10.116 0 mg/kg、K 395.0 mg/kg,与当地蒙古羊相比,甘南藏羊肉具有高蛋白质、低脂肪、矿物质和维生素丰富等特点.

摘  要:
The mutton quality of Gannan Tibetan sheep was analyzed and compared with Mongolia sheep on meat routine nutrient and amino acid contents.The results showed that content of protein,fat and total mineral matter in Gannan Tibetan sheep were 22.45 %,2.94 %,and 410.046 4 mg/kg,respectively. The mutton of Gannan Tibetan sheep had a characteristic of high energy,high protein,more mineral matter,and low fat compared with those of Mongolia sheep.
