三斑海马酶解工艺的优化及其液化蛋白对DPPH·的清除作用

摘  要:
为了优化三斑海马酶解工艺并对其液化蛋白进行抗氧化研究,本文采用酶法工艺对三斑海马进行液化蛋白的提取,以酶解率为指标,采用了4组单因素实验、16组正交实验进行优化,以DPPH自由基的清除率来衡量三斑海马液化蛋白的抗氧化活性。实验结果表明,三斑海马在使用碱性蛋白酶,料液比1:10、反应时间6h、酶用量1%时提取的液化蛋白水解率最高;三斑海马液化蛋白具有较高的抗氧化活性,对DPPH·的IC50为0.07mg/mL,高于维生素C。

摘  要:
In order to study on optimization of enzymatic and the antioxidant activity of liquid protein of Three-spot hippocampus,extraction of soluble protein by enzyme,used 4 single-factor experiment and 16 groups of orthogonal to optimization,measured three-spot hippocampus antioxidant activity of liquid protein by the clear rate to DPPH.The results indicated:when we use alkaline protease,Liquid ratio 1:10,reaction time 6h,1% enzyme dosage the soluble protein hydrolysis was highest;Three-spot hippocampus antioxidant activity of liquid protein was high,the IC50was 0.07mg/mL,higher than the vitamin C.
