乳酸链球菌和干酪乳杆菌混合培养抑菌性的研究

摘  要:
采用牛津杯法对抑菌性进行测定,并对菌液的酸度、活菌数进行了检测。结果表明:混合培养乳酸链球菌和干酪乳杆菌36 h对大肠杆菌的抑制作用最强,抑菌圈直径达32.3 mm,活菌数对数值最高达到9.1。活菌数与抑菌性都较优的比例为乳酸链球菌∶干酪乳杆菌=1∶2,2种乳酸菌混合培养后比单独培养产酸能力、活菌数及抑菌性均得到提高。

摘  要:
The method of oxford cup was used to detect the bacteriostatic activity,acidity and viable bacterial count of the mixed cultivation liquid. The results showed that the 36- h mixed cultivation liquid of Streptococcus lactis and Lactobacillus casei had the strongest bacteriostatic activity to Escherichia coli,and the diameter of inhibition zone reached 32. 3 mm. The 24- h log value of these two bacteria had the most viable bacterial count,being up to 9. 1. After the liquid mixed cultivation of Streptococcus lactis and Lactobacillus casei( 1∶ 2),the mixed cultivation liquid had both more viable bacterial count and stronger bacteriostatic activity. The mixed cultivation liquid of these two bacteria had stronger acid- producing ability,more viable bacterial count,and stronger bacteriostatic activity than their alone cultivation liquid.
