摘  要:
根据蔬菜加工技术的现状,首先介绍了净菜机械化加工技术以及根茎类蔬菜清洗机和叶菜类蔬菜清洗机的结构与原理;其次研究了脱水蔬菜机械化加工技术,其中以热风干燥技术和冷冻干燥技术为重点,介绍了隧道式干燥机、托盘式干燥机、输送带式干燥机以及真空冷冻干燥机的结构与原理等;最后对蔬菜机械化加工技术和设备提出了展望。

摘  要:
According to the present situation of vegetables process technology, the article first introduced the structure and the principle of the clean vegetables mechanization process technology、the root vegetables mechanization process technology and the leaf vegetables mechanization process technology; secondly studied the evaporate vegetables mechanization process technology, and take the heated-air drying technology and the freeze-drying technology as the key point, introduced the structure and the principle about tunnel type dryer、tray type dryer, the transportation conveyor-type drier、vacuum freeze drier and so on; Finally proposed the vegetables mechanization process technology and equipment's development and the forecast.
