巴克夏与湘村黑猪正反交后代肉质性状及肉品成分的比较分析

摘  要:
研究旨在探索巴克夏猪和湘村黑猪正反交对后代肉质性状及肉品营养成分的影响,为巴克夏猪和湘村黑猪杂交系的下一步选育工作提供依据。试验通过正交试验(巴克夏♂×湘村黑猪♀)和反交试验(湘村黑猪♂×巴克夏♀)分别获得巴湘猪和湘巴猪,并对95 kg体重左右的湘村黑猪、湘巴猪和巴湘猪的部分肉质性状指标和肌肉成分进行测定。结果表明,湘村黑猪、巴湘猪和湘巴猪均表现出了良好的肉质特性,系水力、肌内脂肪、谷氨酸、油酸等14个指标组间存在显著差异(P<0.05),巴湘猪和湘巴猪在各类肉质指标上差异不大,巴湘猪在脂肪酸组成比例上表现略优于湘巴猪。

摘  要:
The purpose of this study was to investigate the effect of reciprocal cross with Berkshire and Xiangcun black pig on the meat traits and nutritional ingredients of the offsprings, and provides a basis for the breeding of hybrid system.By means of orthogonal(Berkshire ♂ ×Xiangcun black pig ♀) and reciprocal cross(Xiangcun black pig ♂ ×Berkshire ♀), study acquired BX pig and XB pig respectively.And meat traits and nutritional ingredients were detected of Xiangcun black pig, BX pig, XB pig with a weight of 95 kg respectively.Results showed that all of the Xiangcun black pig, BX pig, XB pig showed good meat quality. That 14 items including water holding capacity, intramuscular fat, glutamate, oleic acid and so on among groups reached the significant level(P<0.05). Most of meat items has no significant differences between BX pig and XB pig, and the fatty acid composition of BX pig may be better than XB pig.
