巴克夏猪与长大二元母猪杂交对后代胴体性能及肌肉品质的影响

摘  要:
从胴体性能和肌肉品质两个方面研究了巴克夏猪在少数民族山区的应用效果。通过屠宰测定巴×长×大、杜×长×大与长×大三组的胴体性状及肌肉品质,综合分析巴克夏猪在少数民族山区的应用效果,为其进一步推广及优选出符合少数民族独特饮食习惯的优质肉猪提供理论基础。结果表明:胴体性状上,巴×长×大组具有较高的屠宰率和较低瘦肉率,与长×大组差异极显著(P<0.01),与杜×长×大组差异显著(P<0.05);巴×长×大杂交猪的肉质指标相对优于长×大及杜×长×大,眼肌面积与长×大差异极显著(P<0.01),与杜×长×大差异显著(P<0.05),且巴×长×大在肉色、大理石纹、熟肉率等指标上与贵州优质猪种剑河白香猪、纳雍糯谷猪及贵州可乐猪相近,而少数民族山区居民多喜食肥猪,巴×长×大更符合当地当地的饮食习惯,应进一步予以推广。

摘  要:
In order to research the application effect of Berkshire in the Minority Areas,the carcass traits and meat quality of L(landrace)×Y(Yorkshire),B(Berkshire) ×L×Y,D(Duroc) ×L×Y were analyzed.The result showed B×L×Y had higher dressing percentage and lower lean meat percentagein carcass traits,the difference was significant compared to D×L×Y(P<0.05),and the difference was extremely significant to L×Y(P<0.01);B×L×Y group was better than D×L×Y and L×Y,the difference of eye muscle area of B×L×Y group was extremely significant(P<0.01) comparing with L×Y,was significant(P<0.05) with D×L×Y group.In addition,B×L×Y group was similar to Jianhe White Xiang Pig,Nayong Nuogu pig and Cola pig in the cooking percentage,marbling and meat color.The meat quality of B×L×Y was more in line with people's eating habit,and the variety sheuld be further extended.
