桑椹采后微生物生长动力学预测模型的构建与品质评价

摘  要:
微生物污染是导致桑椹鲜果采后腐败变质的主要因素。为预测桑椹储存期的品质变化情况,以果桑品种大10的桑椹鲜果供试,采用Gompertz模型建立桑椹储存过程中不同温度下微生物生长动力学的模型方程:5℃下的模型方程为Y=2.329 0×EXP[-EXP(2.143 1-0.502 8 t)],R=0.988 1;10℃下的模型方程为Y=2.819 3×EXP[-EXP(1.405 6-0.658 4 t)],R=0.990 4。2个模型均在α=0.01水平显著,能较好地拟合桑椹在储存期间的微生物生长动态变化。以菌落总数105cfu/g为桑椹腐败水平临界值,检测桑椹5℃储存8 d、10℃贮藏4 d后的菌落总数>105cfu/g。结合桑椹采后储存期的质构特性与营养成分含量检测结果,评价桑椹采后微生物生长动力学预测模型的有效性:模型预测桑椹菌落总数与腐烂指数呈极显著正相关关系,预测菌落总数分别与果实硬度、可滴定酸含量、可溶性总糖含量、维生素C含量、总花色素苷含量呈极显著负相关关系;当菌落总数低于腐败水平临界值(10~5cfu/g)时,桑椹果实腐烂指数<20%,硬度>3.5 N,可滴定酸(H+)浓度>25.0mmol/kg,可溶性总糖质量比>40.0 g/kg,维生素C质量比>50.0 mg/kg,总花色素苷质量比>0.5 g/kg,果实可视作商品果,即桑椹的各项品质指标在消费者可接受水平。

摘  要:
Microbial contamination is one of the main factors leading to the deterioration of fresh mulberry fruit after harvest. In order to predict quality change of mulberry fruit during storage,fresh fruits of mulberry variety Da 10 were used as experimental materials and microbial growth kinetics models of mulberry fruit stored under different temperatures were simulated by Gompertz model. In the mulberry fruit storage condition of 5 ℃,the model was established as Y= 2. 329 0×EXP[-EXP( 2. 143 1-0. 502 8 t) ],R = 0. 988 1. In the storage condition of 10 ℃,the model was established as Y =2. 819 3×EXP[-EXP( 1. 405 6-0. 658 4 t) ],R= 0. 990 4. Two models all reached significant level at α = 0. 01 and could describe the microbial growth kinetics of mulberry fruit during storage. By setting the total number of bacterial colonies105 cfu/g as threshold level of mulberry fruit corruption,the total number of bacterial colonies in mulberry fruit were more than 105 cfu/g after stored at 5 ℃ for 8 d and at 10 ℃ for 4 d. Combined with the texture characteristics of mulberry fruit during storage and detection results of nutritional composition content,the effectiveness of microbial growth kinetics model was evaluated. According to the established models,it is predicted that the total number of bacterial colonies in mulberry fruit had extremely significant positive correlation with rotting index,but had extremely significant negative correlation with the fruit firmness,titratable acid content,total soluble sugar content,vitamin C content,and total anthocyanins content. When the total number of bacterial colonies was less than corruption threshold level( 105 cfu/g),the rotting index of mulberry fruit < 20%,firmness > 3. 5 N,the concentration of titratable acid H+> 25. 0 mmol/kg,the mass ratio of total soluble sugar >40. 0 g/kg,the mass ratio of vitamin C >50. 0 mg/kg,and the mass ratio of total anthocyanins >0. 5 g/kg,indicating that the mulberry fruit would be commercially acceptable.
