橄榄油在中式菜点制作中的运用

摘  要:
橄榄油在地中海沿岸国家有着几千年的食用历史。研究表明,长期食用一定量的橄榄油,可有效降低罹患溃疡性肠炎、心脏病等疾病的风险。由于受到人们的饮食习惯、认识等因素影响,橄榄油在我国的菜肴制作中还没有得到广泛的使用。为了让更多的人们能够享受这种健康食用油,针对中式菜肴的制作特点及中国人的饮食、口味习惯,研究了橄榄油的合理运用方法。

摘  要:
In Eastern Mediterranean countries,olive oil has thousands years' history as edible oil. Due to factors such as dietary habit,perception,olive oil has not been widely used in Chinese dishes. In order to allow more people to enjoy the healthy oil,according to the features of Chinese dishes,and tastes and dietary habits of the Chinese people,rational use of olive oil was researched.
