鲜切苹果保藏研究

摘  要：
[目的]为鲜切苹果的保鲜提供依据。[方法]以0.04 mm的低密度聚乙烯(LDPE)、高密度聚乙烯、聚丙烯膜为包装材料,研究保鲜膜对鲜切苹果的保鲜效果。[结果]各处理对苹果多酚氧化酶活性均有不同程度的抑制,LDPE膜包装的较弱。LDPE包装的鲜切苹果呼吸强度一直保持较低水平。LDPE膜包装鲜切苹果能够自动控制适宜的O2和CO2含量。随着贮藏天数的延长,鲜切苹果中的微生物数量呈增多趋势,贮藏12 d时LDPE膜包装的微生物数量最少。整个贮藏期间LDPE膜包装的鲜切苹果感官得分一直较高,贮藏12 d时LDPE的SSC含量最高,两者与其他处理的差异达显著水平。[结论]3种保鲜膜包装均能不同程度地抑制鲜切苹果的呼吸强度,推迟呼吸高峰期,减少营养物质消耗,低密度聚乙烯保鲜膜较适合鲜切苹果的自发气调包装。

摘  要：
[Objective] The aim of the research was to provide basis for the fresh-keeping of fresh-cut apples.[Method] The film of 0.04 mm low density polyethylene(LDPE),high density polyethylene and polypropylene were taken as packaging materials to study the fresh-keeping effect of fresh-keeping film on freshcut apples.[Result] Each treatment all had inhibitory effects on polyphenol oxidase activity in apples to different extent and that of packing with LDPE film was weaker.The respiration intensity of fresh-cut apples packed with LDPE film always kept at lower level.Fresh-cut apples packed with LDPE film could control suitable contents of O2 and CO2 automatically.With the prolonging of preservation days,the microbe quantity in fresh-cut apples showed an incresing trend.The microbe quantity was least on 12th day of storage.The sensory score of fresh-cut apples packed with LDPE film was always higher in the whole preservation period and SSC content of LDPE was highest on 12th day of storage.The differences between the two and other treatments reached significant level.[Conclusion] 3 kinds of fresh-keeping film all could inhibit the respiration intensity of fresh-cut apples to different extent,prolong the respiration peak stage and reduce the consumption of nutrients.Fresh-keeping film with LDPE was more suitable for modified-atmosphere packing in fresh-cut apples.
