野生毛葡萄籽原花青素对茶籽油的抗氧化活性研究

摘  要:
[目的]为进一步开发利用野生毛葡萄籽原花青素提供试验依据。[方法]以野生毛葡萄籽中的原花青素为抗氧化剂,采用Schaal烘箱法定期测定茶籽油样品的过氧化值。比较原花青素与PG、BHT、VE的抗氧化活性。[结果]质量百分数为0.04%的野生毛葡萄籽原花青素的抗氧化性比0.02%BHT、0.01%PG和0.02%VE的稍差,0.02%原花青素与0.01%VE混合使用的效果较好。添加0.04%的原花青素可使茶籽油在20℃下的保质期由100 d延长至175 d,而0.02%PC+0.01%VE可使其延长至352 d。[结论]野生毛葡萄籽原花青素对茶籽油有一定抗氧化作用,并且最适添加量为0.04%。单独使用时其效果不如BHT、PG和VE,与VE混合使用时,其效果优于它们。

摘  要:
[Objective] The study aimed to provide experimental basis for further exploiting and utilizing the procyanidine from the seeds of wild Vitis quinquangularis.[Method] With the procyanidine from the seeds of wild V.quinquangularis as antioxidant,the peroxide value of camellia oil sample was determined periodically by Schaal oven method.The antioxidant activity of procyanidine was compared with that of PG,BHT and VE.[Result] The antioxidant activity of procyanidine with mass percent of 0.04% from the seeds of wild V.quinquangularis was a little worse than that of 0.02%BHT,0.01%PG and 0.02%VE.The effect of mixed use of 0.02% procyanidine and 0.01% VE was better.Adding 0.04% procyanidine could extend the shelf life of camellia oil under 20 ℃ from 100 d to 175 d,but 0.02%PC + 0.01%VE could extend it to 352 d.[Conclusion] The procyanidine from the seeds of wild V.quinquangularis had some antioxidant action on camellia oil and its optimum addition was 0.04%.When it was used alone,its effect was worse than that of BHT,PG and VE.When it was used in the combination with VE,its effect was better than theirs.
