摘  要:
In this article,advanced research on the chitosan characters,the physiological and biochemistry effects of chitosan coating on fruit and vegetable storage,the optimum density and effect of chitosan coating on fruit and vegetable were introduced,and the feasible mechanism of chitosan coating for putting off fruit and vegetable senescence and softening were discussed.
