五台山产棕灰口蘑(Tricholoma terreum)鉴定及其营养成分分析

摘  要:
五台山台蘑久负盛名。为明确五台山市场售卖的一种台蘑的名称及营养价值,对其进行了形态学和分子生物学鉴定研究和营养成分的分析测定。通过rDNA的内转录间隔区(internal transcribed spacer, ITS)特异性扩增和序列比对,发现其与棕灰口蘑(Tricholoma terreum)的序列相似度高达99%,通过构建系统发育树并结合形态学特征确定此种食用菌为棕灰口蘑(T.terreum)。研究表明此种食用菌营养均衡,微量元素丰富,含有灰分13.5%,脂肪7.5%,总糖3.83%,总蛋白28.3%,不溶性膳食纤维18.6%,碳水化合物48.8%,含铁为294.76μg·g~(-1),锌38.86μg·g~(-1),铷101.32μg·g~(-1),锰15.32μg·g~(-1)。本研究为棕灰口蘑这一食用菌的开发利用奠定了基础。

摘  要:
Mushroom in Mount Wutai has enjoyed a good reputation for a long time. To clarify the name of one species sold in markets of Mount Wutai and its nutritional value, the morphological and molecular biological identification of this species were conducted and its nutritional composition were analyzed. Through internal DNA transcribed spacer(ITS) specific amplification and sequence alignment of rDNA, it was found that its sequence similarity to Tricholoma terreum was as high as 99%. Combined with construction of phylogenetic tree and the study on the morphological characteristics, this edible fungus was identified as Tricholoma terreum. The results showed that this edible mushroom is nutritionally balanced and its trace elements are abundant, which contains 13.5% ash, 7.5% fat, 3.83% total sugar, 28.3% total protein, 18.6% insoluble dietary fiber, 48.8% carbohydrate, and 294.76 μg·g~(-1) of iron, 38.86 μg·g~(-1) of zinc, 101.32 μg·g~(-1) of osmium, and 15.32 μg·g~(-1) of manganese In each 100 g dry weight, This study laid the foundation for the processing and utilization of the edible mushroom Tricholoma terreum.
