辐照对脱水胡萝卜中微生物ATP生物发光的影响

摘  要:
以脱水胡萝卜为试验材料,经高压灭菌和添加菌液的前处理,研究辐照对脱水胡萝卜中微生物ATP生物发光的影响。辐照处理设5个不同剂量处理,将脱水胡萝卜经高压灭菌后,制成添加菌液的脱水胡萝卜,测量微生物ATP生物发光值。结果显示:脱水胡萝卜初始含菌量较低,当辐照剂量为4.0 kGy时,菌落总数、霉菌和大肠菌群含量均未检出;脱水胡萝卜中微生物ATP生物发光值随辐照剂量的增加而增大,在经高压灭菌的脱水胡萝卜样品中分别添加杂菌、霉菌和大肠菌群后,3种菌的ATP生物发光值随辐照剂量变化的趋势基本相同,都是随辐照剂量的增加呈先降低再增加的趋势;前处理和辐照处理对微生物ATP提取液的本底发光都没有明显影响。

摘  要:
The dehydrated carrot was selected as material to study the effect of irradiation on the bioluminescence of microbial ATP in the dehydrated carrot after it was pretreated by high pressure and injecting microorganism.There were five different irradiation doses: 0 kGy,2.0 kGy,4.0 kGy,6.0 kGy and 8.0 kGy.After sterilized under high pressure,the dehydrated carrots were injected with mixed microbe,mould and coliform.The supernatant of these mixture were used to determine the bioluminescence value of microbial ATP.The results showed that no bacteria,mould and coliform in the dehydrated carrot was detected with the irradiation dose of 4.0 kGy.The relative light unit(RLU) of microbial ATP in dehydrated carrot without pretreatment was increased with the increase of irradiation doses.After the mixed microbe,mould and coliform were injected,RLUs of the three microorganisms had the same trend,which were all decreased first and then increased with the increase of irradiation doses.The RLU background of microbial ATP in dehydrated carrot was not affected significantly by the pretreatment and irradiation treatment.
