我国牛皮加工增值途径探析

摘  要:
牛皮富含胶原蛋白,营养价值高,目前对我国牛皮食用加工增值途径的文章未见报道。了解我国牛皮和其他畜禽皮的开发利用现状,对我国牛皮制品的开发以及传统制品工艺现代化具有重要的参考价值。文章对国内牛皮制品的研究现状进行了总结,并结合其他畜禽皮的生产现状提出建议:牛皮制品的开发应把握现代食品的消费方向,从加深企业对牛皮的认识、加大科研力度和国家政策扶持等几方面,实现加工工艺现代化,从而使牛皮的价值得到充分利用。

摘  要:
Cowhide is rich in collagen,and has high nutritional value. However,the articles about the value- add approach to edible cowhide processing have not been reported at present. It has important reference value for the exploitation of the cowhide products and the modernization of the crafts for traditional products to understand the status of exploitation and utilization of cowhide and other animal skins. This article summarizes the research status of domestic cowhide products,and makes the following suggestions combining with the production status of other animal skins: the exploitation of cowhide products should grasp the consumption direction of modern foodstuffs; achieving the modernization of processing technology based on the aspects of deepening the understanding of enterprises for cowhide 's utilization,increasing scientific research strength and national policy support,so as to make full use of the nutritional value of cowhide.
