红肉火龙果果肉色素提取工艺研究

摘  要:
以红肉火龙果为研究对象,在单因素试验的基础上,选取提取温度、pH值、提取时间3个因素,采用响应面分析法,以红肉火龙果果肉色素吸光值为响应面进行提取工艺的优化.结果表明:提取温度30℃,pH值4.5,提取时间36 min,预测红肉火龙果果肉色素吸光度的最优值为0.401,经试验验证红肉火龙果果肉色素的吸光值为0.405,与预测值接近,可见采用响应面法对红肉火龙果果肉色素提取条件优化合理可行.

摘  要:
On the basis o f single-factor test,using response surface analysis to optimize technological conditions of extracting pigments fromred-fleshed pitaya by selecting extraction temperature,pH value and extraction time as factors and absorbance of pigments in red-fleshed pitaya solution as response surface.The results showed that when extraction temperature,pH and extraction time were 30℃,4.5 and 36 min,respectively,the predicted absorbance of pigments in redfleshed pitaya was 0.401,and the actual absorbance verified by experiment was 0.405.Therefore,it is feasible to optimize technological conditions of extracting pigments from red-fleshed pitaya using response surface analysis method.
