薄膜包装对模拟运输过程红椒品质的影响

摘  要:
红椒运输品质下降的一个重要原因是机械损伤,选用合理的包装方式对保持红椒的品质有良好的效果。以淮安红椒"先红一号"为材料模拟物流运输过程,研究了2种包装处理条件下不同振动时间对红椒运输及随后的常温贮藏过程中品质的影响。结果表明,运输过程中的振动对红椒贮藏品质有明显伤害,保鲜期缩短约2 d。与市场普通红椒包装袋相比,P1包装对延缓红椒品质劣变有明显效果,可维持相对较好的红椒硬度,显著降低腐烂率,延缓感官品质下降速率,诱导APX(抗坏血酸过氧化物酶)、POD(过氧化物酶)、CAT(过氧化氢酶)和SOD(超氧化物歧化酶)等抗衰老相关酶的活性,抑制有害物质MDA(丙二醛)的积累。因此,P1包装能有效降低红椒采后损耗、延长货架期,可代替普通红椒包装袋用于红椒物流运输及贮藏、销售。

摘  要:
An important reason for the decline in transportation quality of red pepper is mechanical damage,so choosing a reasonable packaging method is beneficial to the maintaining of red pepper quality. The"Xianhong 1"red pepper was used as experimental material to simulate the logistics transportation process,and the effects of different vibration time on the quality of red pepper during transportation and subsequent normal-temperature storage under two kinds of packaging conditions were investigated. The results showed that the vibration treatment during transportation obviously harmed the storage quality of red pepper,and its shelf life was shortened by about 2 days. In comparison with the common packaging of red pepper in the market,P1 packaging had obvious effects on delaying the deterioration of red pepper quality,maintaining relatively good hardness of red pepper,significantly reducing the rotting rate,delaying the decline rate of sensory quality,inducing the activity of anti-aging-related enzymes( APX,ascorbic acid peroxidase; POD,peroxidase; CAT,catalase; SOD,superoxide dismutase),and inhibiting the accumulation of harmful substance MDA( malondialdehyde). Therefore,P1 packaging material can effectively reduce the postharvest loss of red pepper,prolong the shelf life of red pepper,and can be used in red pepper logistics transportation,storage and sale.
