水蒸气蒸馏-分光光度法测定发酵乳中羰基化合物含量的研究

摘  要:
采用水蒸气蒸馏-分光光度法测定了发酵乳中影响风味的主要羰基化合物:乙醛和双乙酰。试验确定了最佳水蒸气蒸馏馏出液体积;使用酚试剂分光光度法测定发酵乳中乙醛含量,邻苯二胺分光光度法测定发酵乳中的双乙酰含量;并建立标准工作曲线及计算公式。试验表明,水蒸气蒸馏-分光光度法具有高回收率和高精密度,对乙醛和双乙酰的回收率分别为91.16%和92.24%;6次重复的变异系数分别为4.69%和4.51%。该方法具有准确稳定、简便高效的特点,可应用于实验室或生产中发酵乳中乙醛和双乙酰含量的检测。

摘  要:
The main carbonyl compounds that affecting the flavor of fermented milk were measured by using steam distillation-spectrophotometry method,which were aldehyde and diacetyl,and the optimum distillate volume that was distilled by water vapor was also determined.The aldehyde content in fermented milk was determined by using phenol reagent-spectrophotometry method,and the diacetyl content in fermented milk was determined by using 0-phenylenediamine-spectrophotometry method.Meanwhile,the standard calibration curves and calculated equations were established.The experimental results indicated that steam distillation-spectrophotometry method has high recovery rate and high precision,whose recovery rate was 91.16% for aldehyde and 92.24% for diacetyl;six repeated experiments of aldehyde and diacetyl were carried out with the variation coefficient of 4.69% and 4.51%,respectively.This method is accurate,stable,simple and high efficiency,which can be applied to determine aldehyde content and diacetyl content in fermented milk in laboratory or in production.
