钙离子交联壳聚糖/魔芋精粉涂膜在樱桃保鲜中的应用研究

摘  要:
[目的]通过壳聚糖和魔芋精粉制备樱桃可食用保鲜膜,以期延长樱桃的贮存和保鲜时间。[方法]首先以壳聚糖和魔芋精粉为单体,钙离子作为交联剂制备了钙离子交联壳聚糖/魔芋精粉,然后将其应用于樱桃可食用保鲜膜中,考察了壳聚糖/魔芋精粉的配比对膜强度的影响,最后探索了钙离子交联壳聚糖/魔芋精粉可食用膜对樱桃储存中失重率的影响。[结果]当壳聚糖/魔芋精粉的比例为2∶1时,涂膜的强度最大,这种复合保鲜膜有效降低了樱桃失重率的损失。[结论]钙离子交联壳聚糖/魔芋精粉可食用保鲜膜能够很好地延长樱桃的贮藏和保鲜时间。

摘  要:
[Objective]The edible preservative film was prepared with chitosan and konjac powder in order to prolong the storage and preservation time of cherries. [Method]Firstly,chitosan and konjac flour were used as monomers,calcium ions was used as crosslinking agents to prepare calcium ion crosslinked chitosan/konjac flour. Then,the calcium ion crosslinked chitosan/konjac flour was applied in edible freshkeeping film,we investigated the effect of chitosan/konjac flour on the membrane strength. Lastly,we explored the effect of calcium ion crosslinked chitosan/konjac flour edible film on the weightloss rate in cherry storage. [Result]The experiment result showed that when chitosan/konjac flour with 2∶1 demonstrated the optimum tensile strength,this film effectively reduced the weight loss of cherry. [Conclusion]Calcium ion crosslinked chitosan/konjac flour edible preservative film could be used to prolong the storage and preservation time of cherries.
