声学干燥在农产品加工中的应用现状

摘  要:
干燥是农产品加工中的重要环节,干燥的最终目的是获得较优品质的干制品.声学干燥能够改善物料内部结构,增加水分迁移速率,提高干制品品质,并且可与其他干燥方式进行组合,具有广阔的市场前景.本文基于声学干燥原理,从干燥试验、干燥动力学和干燥机理3个方面论述国内外声学干燥的研究进展,并从数值模拟、校企合作和物料种类3方面提出对声学干燥工业的发展期望,为声学干燥的进一步研究提供建议.

摘  要:
Drying is an important part in the processing of agricultural products. The ultimate goal of drying is to obtain the dryed products which have better quality. Acoustic drying can improve the internal structure of materials, increase the rate of moisture migration, improve the quality of products, and can be combined with other methods, which has broad market prospects. Based on the principle of acoustic drying, the research progress of acoustic drying at home and abroad was discussed from three aspects: drying test, drying kinetics and drying mechanism. The development expectation of acoustic drying industry was put forward from three aspects: numerical simulation, school-enterprise cooperation and material types, which provided suggestions for further research of acoustic drying.
