TVB-N与生鲜草鱼片储藏时间和温度的关系

摘  要:
挥发性盐基氮(TVB-N)是反映水产品鲜度变化的重要指标之一。通过测定不同贮藏温度下的TVB-N随时间的变化值,并配合感官评价和汁液流失率的测定,研究其与生鲜水产品草鱼(Ctenopharyngodon idellus)腐败的相关关系,并建立TVB-N值与贮藏时间和贮藏温度之间的动力学模型。结果表明,挥发性盐基氮的值与贮藏温度及时间均呈正相关,即温度越高,时间越长,TVB-N值越大且增长趋势越明显,感官评分下降,汁液流失率上升,指标变化均反应水产品腐败程度加深。不同温度下TVB-N值随贮藏时间变化呈显著正相关(R2>0.987)。其一级反应动力学模型和阿伦尼乌斯方程对TVB-N值的变化有很高的模拟精度。挥发性盐基氮变化阿伦尼乌斯方程的回归系数为7.77×109。

摘  要:
Total volatile basic nitrogen(TVB-N) is one of the important indexes to evaluate the freshness of aquatic products.To study the relationship of TVB-N and fresh grass carp fillet spoilage, changes of TVB-N,sensory qualities and juice leakage rate with time at different storage temperature were investigated by periodically determination. The kinetic model was established between TVB-N value and storage time and temperature. The results showed that TVB-N values were positively correlated with storage temperature and time,that is, the higher the temperature, the longer the time,TVB-N value will be higher and the growth trend is more obvious. Accompanied by a decline in sensory scores,drip loss rate was on the rise. Indicators of changes response to the deepening of the degree of corruption of aquatic products. The TVB-N values were significantly positively correlated with storage time in difference storage temperature(R2>0.987). The first order reaction kinetics model and the Arrhenius equation have very high simulation precision to the change of TVB-N values with time and temperature. The regression coefficient of Arrhenius equation in TVB-N change is 7.77×109.
