地方应用型本科院校食品工艺学实验教学改革探索——以果蔬汁饮料加工为例

摘  要:
为提高新时期下食品质量与安全专业的人才培养质量,对地方应用型本科院校的食品工艺学实验进行教学改革,将饮料加工模块中果蔬汁饮料的加工由验证性实验转变成综合性、开放性实验。该文以果蔬汁饮料加工为例,介绍了教学改革的实施过程,评价了改革后的教学效果,总结了实施过程中存在的问题,以期为地方院校应用型人才培养提供参考。

摘  要:
In order to improve the quality of talent training for food quality and safety under the new period,thecourse of food processing experiment of local application-oriented university was reformed,the experimental courseof fruit and vegetable beverage processing was transformed from verification experiment to comprehensive experi-ment.This paper is about the reform procedure and the assessment of reformed effectiveness,finally,insufficient issummarized and further discussion on the related topics of educational innovation is proposed.
