摘  要:
应用交叉拮抗法从明串珠菌和片球菌菌株中筛选产细菌素菌株,获得了4株具有明显抑菌效果并对蛋白酶敏感的菌株,分别为乳酸明串珠菌9、乳酸片球菌、肠膜明串珠菌WZ30-2和肠膜明串珠菌WZ-9-2菌株。

摘  要:
Bacteriocins produced by lactic acid bacteria as biological preservation have received more attention in recent years. As food-graded microorganisms, Leuconostoc and Pediococcus strains play an important role in modern food production. The ability of some strains from these two LAB to produce bacteriocins to be used potentially as biological agent according to recommended methods was investigated. It was proved that 4 strains from Leuconostoc (Leuconostoc lactis 9, Leuconostoc pseudomesenteroides WZ-9-2 and Leuconostoc mesenteroides subsp. dextranicum WZ30-2) and Pediococcus acidilactici produced bacteriocin-like compounds which were sensitive to proteinase K in MRS medium incubated at 37 ℃ for 12 h.
