草鱼片冰温真空干燥特性及数学模型

摘  要:
本文以草鱼片为试材,研究了不同真空压力(600~700、1100~1200、1600~1700 Pa)、不同物料厚度(3、5、7 mm)条件下草鱼片冰温干燥特性,通过水分比的变化拟合草鱼片冰温干燥数学模型。实验结果表明:真空压力和物料厚度均对草鱼片冰温干燥的速率有较大影响,真空压力越低、草鱼片厚度越薄,干燥用时越短。Midilli模型能较好的模拟草鱼片冰温真空干燥过程,Midilli模型的R~2>0.997,χ~2<0.08‰,RMSE<0.85%,模型预测值与实验值很好吻合,可以用来描述草鱼片冰温干燥进程。

摘  要:
The ice temperature vacuum drying characteristics of grass carp were examined at different levels of vacuum pressures( 600~700,1100 ~ 1200 and 1600 ~ 1700 Pa) and material thickness( 3,5 and 7 mm) respectively. The mathematical modeling of ice temperature vacuum drying of grass carp was established by the changing of moisture ratio.The results showed that vacuum pressure and material thickness all affected the drying rate remarkable. The lower the vacuum pressure and the material thickness were,the shorter the drying time was. The midilli model could better simulate the ice temperature vacuum drying process of grass carp with the correlation coefficient( R~2) > 0.997,reduced chi-square( χ~2) < 0.08‰ and root mean square error( RMSE) < 0.85%. The predicted values of the model were in good agreement with the experimental values.Therefore,the midilli model could be used to describe the ice temperature vacuum drying of grass carp.
