摘  要:
This paper studied the fabrication technique of g elatinous confections with dietary fibre without sucrose.The chitosan and konjaku flour were used as dietary fibre materials and g elling as well as forming ag ent.The production applied sodium cyclatame and xylitol as sweet ag ent instead of sucrose.The production technique and formula of the g elatinous confections with dietary fibre without sucrose were determined.
