食品安全已成为人们所关注的重要问题,超声波作为一种方便、快捷、高效的技术在食品安全检测方面发挥了很大作用。为此,介绍了超声波技术的原理,综述了其在食品安全检测方面的最新进展,并指出了其在果蔬制品、肉禽制品、乳制品以及粮食制品检测面都具有独到的优势和广阔的发展前景。

摘  要:
Food safety has been an important problem that people concern much. As a convenient, quick, efficient measuring technique, supersonic wave has been applied widely in measuring food safety. This paper introduces the principle of supersonic wave, describes the latest development of supersonic wave in measuring food safety and points out its unique advantage and bright future in measuring fruit and vegetable products, meat products, milk products and other aspects.
