桑椹红色素不同测定方法的比较研究

摘  要:
[目的]研究和比较桑椹红色素的不同定量分析方法。[方法]以酸性乙醇溶液提取桑椹红色素,并用大孔树脂对其进行初步纯化。分别利用色价法、消光系数法、pH示差法和NaNO2-Al(NO3)3比色法测定桑椹花青素的含量。[结果]纯化后色素的色价是纯化前的14.8倍;消光系数法测得桑椹红色素中花青素含量为0.015%;pH示差法测得其含量为0.017%;比色法测得含量为0.007 6%。[结论]pH示差法测定桑椹花青素含量较为准确。

摘  要:
[Objective] The aim was to study the quantitative analysis of mulberry red pigment.[Method] Mulberry red pigment was extracted by using acid alcohol and macroreticular resin was purified.The pigment content was analyzed by color value method,extinction coefficient method,pH differential method and NaNO2-Al(NO3)3 method,respectively.[Result] The purified pigment was 14.8 times the color value of unpurified one.The mulberry red pigment content measured by extinction coefficient method was 0.015%.The one measured by pH differential method was 0.017%.The one measured by NaNO2-Al(NO3)3 method was 0.007 6%.[Conclusion] pH differential method was more accurate for the quantitative analysis of mulberry anthocyanins.
