速冻枸杞鲜果参数的探讨

摘  要:
以“宁杞1号”鲜枸杞为原料作速冻参数研究的实验,并从理论上对冻结率、冻结时间和贮藏时间进行推算.结果表明,枸杞不易用振荡式流态化单体速冻机冻结,应将枸杞先装入包装袋、平放在料盘中,厚度以30~80 mm为宜,采用隔架式或平板式装置冻结.当装料厚度为40 mm、冻结终点的中心温度为-18℃时,冻结时间是3 h,可在-18℃的冷藏库贮存时间为9个月.

摘  要:
Freeze rate, freeze time and cold storage time of fresh wolfberry were tested and studied. The result showed that this product should be quick-freezed by shelf freezer or plate freezer. When the thickness of contain materials was 40cm and the freeze center temperature was -18℃, freeze time was just 3h, and the fresh wolfberry could be stored for 9 months at -18℃ in storehouse.
