肌纤维类型与生理代谢、生长性能及肉质的关系

摘  要:
介绍了肌纤维类型及其分型方法,阐述了不同纤维类型的特征,同时探讨了肌纤维类型与肌肉生理代谢调控途径之间的关联,分析了肌纤维类型与肉用动物产肉能力的关系,以及肌纤维类型组成对肉品质的影响机理。并提出为了完善肉品质形成理论,有必要建立一种多因素的综合分析系统,以探究肌纤维对肉质形成的调控途径。

摘  要:
Muscle fiber types as well as their characteristic sand typing system sare describe din this paper.Meanwhile,there lationship between muscle fiber types and metabolic regulation pathway sisalso explained.The association between muscle fiber types and growth performance of meat animal sisanalyzed,as well as theme chanism underlying the influence of muscle fiber type composition on meat quality.Itissuggested that a comprehensive multi-factor analysis system should be built in order to investigate regulatory pathways of muscle fibers on meat quality.
