摘  要:
餐饮业的食物浪费日益成为人们关注的焦点。然而,如何测量食物浪费程度及种类、分析产生食物浪费的原因以及如何实现餐饮业持续健康地发展等是学术界较为重视的方面。在明确研究背景的基础上,回顾国内外关于食物浪费的研究进展,阐述了研究团队进行食物浪费研究的方式、方法,特别探讨了食材向食物转化过程中的不同阶段和重要概念、消费行为模型、经济与营养目标模型等,最后阐述了该研究成果的意义及未来应用。

摘  要:
Food waste in the catering industry is increasingly paid more attention by society.However,to measure the degree and the types of waste food,to analyze the causes of food waste and how to realize the sustainability of healthy development in catering industry are more emphases on academic aspects.Firstly,this study illustrated the research background,and then reviewed the research progress of food waste at home and abroad,and introduced the relative methods on studying food waste,especially explored the different stages of the catering industry and relative concepts,consumer behavior model,the economic and nutritional goal model,etc.,finally,the significance and the application of research findings were expounded.
