摘  要:
【目的】对影响杏李味厚品种的理化指标进行测定分析,研究影响其品质的主要指标,筛选出能够反映果品品质的简化指标,为生产中快速检测试验提供依据。【方法】以杏李味厚品种为试验材料,对测得不同采摘期杏李味厚11个理化指标进行研究,运用主成分析影响品质的主要指标并通过相关性分析法分析每个指标的相互之间的相关程度,采用欧氏距离进行系统聚类分析,得到指标的聚类谱图,从而确定影响杏李味厚品质简化的理化指标。【结果】将反映杏李品质的11个指标简化为可溶性固形物、硬度、p H、多酚酶4项指标反映果品的品质。【结论】通过快速检测果实中可溶性固形物、硬度、PH、多酚酶4项指标来反映果品的品质。

摘  要:
【Objective】The purpose of the project is to simplify the physical and chemical indicators of the plumcot " Weihou" and to provide the evidences for quick detection in production.【Method】The principal component analysis,correlation analysis and statistical clustering analysis were applied to simplify the 11 physical and chemical indicators of " Weihou" plumcot at different picking periods,thus further simplifying the physical and chemical indicators influencing the quality of the plumcot " Weihou".【Result】The eleven indicators of the plumcot could be simplified into four items: soluble solid content,hardness,p H and polyphenoloxidase to reflect the maturity of the fruit. Among the eleven testing indicators,these four indicators could simply reflect the quality. 【Conclusion】It can be concluded that the four indicators: soluble solid content,maturity of the fruit hardness,p H and polyphenoloxidase reflect the quality and maturity.
