山药滚筒干燥制粉工艺的研究

摘  要:
选用山药为原料,进行滚筒干燥制粉加工工艺的研究。以山药粉的成膜率为评价指标,采用响应面分析法,研究了辅料添加量、滚筒转速及滚筒表面温度对滚筒干燥工艺的影响。实验结果表明,山药粉滚筒干燥工艺最佳组合为淀粉添加量15%,滚筒表面温度为135℃,滚筒转速为3.0r/min。经验证,此条件下干燥的山药粉成膜率达95.6±0.6%。

摘  要:
We studied the technology of processing Chinese yam powder using a drum dryer in this paper. The effects of supplementary material addition content, roller rotating speed, roller temperature on the technology were analyzed with response surface methodology, and film-forming rate of Chinese yam powder were taken as response values. For design of process requirement, optimum conditions were as follows: supplementary material addition was 15%, roller temperature was 135℃, roller rotating speed was 3.0r/min. Under those conditions, film-forming rate of Chinese yam powder was 95.6±0.6%.
