海藻酸钠在可食性肠衣膜中的应用研究

摘  要:
以海藻酸钠为可食性膜生产的主要生产原料,添加不同助塑剂作为可食性膜的基料,与钙离子反应制备具有良好机械性能和阻隔性能海藻酸钠可食性膜。经过研究确定海藻酸钠粘度为208mpa·s,各基料成分的浓度为:海藻酸钠1.2%,明胶0.3%,羧甲基纤维素钠0.4%,卡拉胶0.1%,甘油0.05%,选用凝胶剂为CaCl2,浓度为4%,最佳干燥温度和时间为50℃、4?5h,得到的可食性膜厚度适中、表面光滑、硬度适宜、胶凝强度大,符合产品的生产要求。

摘  要:
Sodium alginate was taken as the main raw material to product the edible film. Different auxiliary plasticizer was added as base material, and then reacting with calcium ion to prepare sodium algi-nate edible film with good mechanical and barrier properties. According to the research,the result showed that alginate viscosity was 208mpas, sodium alginate 1. 2%, gelatin 0. 3%, sodium carboxymethyl cellu-lose 0. 4%, carrageenan 0. 1%, glycerol 0. 05%, CaCl2 was 4%, the best drying time and temperature was 50℃ and 4. 5h. The product with moderate thickness, smooth surface, moderate hardness and gel strength was obtained. It conformed to the production requirements for the product.
