唐宋时期巴蜀地区鱼类资源的开发与食用研究

摘  要:
唐宋时期在以益州(成都府)、绵州、嘉州、夔州为核心的城市区域,鱼类资源得到进一步开发.较之汉晋时代,捕捞所得的品种更加多样化,渔业生产的商品化程度提高.人们所使用的渔具渔法有着一定的区域特色,适应了上游河道多岩石、滩险流急的水文情况.饮食文化上,鱼鲙是唐宋时期流行于巴蜀地区鱼肉烹饪的一种主流方式.与同时期同属长江流域的江南地区相比较,在鱼类资源开发上,二者又存在着一定区域差异.

摘  要:
In the Tang and Song Dynasties, fish resources were further developed in the urban areas with Yizhou(Chengdu), Mianzhou, Jiazhou and Kuizhou as the core. Compared with the Han and Jin Dynasties, the species of fishing income were more diversified and the commercialization of fishery was improved. The fishing gear and fishing method used by people has certain regional characteristics and adapts to the hydrological con‐ditions of rocky upstream rivers and rapids. In terms of dietary culture, fish mackerel was a mainstream way of fish cooking popular in Bashu area in Tang and Song Dynasties. Compared with the southern region of the Yangtze River Valley in the same period, there are some regional differences in fish resources development be‐tween the two regions.
