摘  要:
【目的】探讨乳链菌肽对荸荠贮藏期间腐烂病和品质的影响,为实际生产中延长荸荠贮藏期提供技术支持。【方法】以0.03%乳链菌肽分别浸泡洗净和带泥的采后荸荠5 min为试验处理(T1和T2),以不经乳链菌肽处理的洗净和带泥荸荠为对照(CK1和CK2),均置于温度(6±1)℃、湿度40%~60%的冷库条件下贮藏,测定贮藏期间荸荠的菌落总数、烂果率、可溶性固形物(TSS)含量、丙二醛(MDA)含量及过氧化物酶(POD)、超氧化物歧化酶(SOD)和苯丙氨酸解氨酶(PAL)活性等指标。【结果】带泥或洗净的荸荠经乳链菌肽处理,可减缓菌落总数和烂果率上升,防止贮藏期间荸荠的腐烂病发生,有效延缓荸荠TSS含量下降和MDA含量积累,抑制POD、SOD和PAL活性的快速上升;其中,乳链菌肽处理洗净的荸荠贮藏至第100 d时仍能保持较好品质,分别与CK1和CK2相比,其菌落总数明显减少36.84%和29.41%,烂果率降低77.09%和79.29%,TSS含量上升75.00%和69.00%,MDA含量下降34.59%和33.81%,POD活性降低17.14%和20.87%,SOD活性升高45.68%和71.61%,PAL活性下降25.17%和28.93%。【结论】乳链菌肽可抑制荸荠贮藏期腐烂病发生和品质下降,从而延长荸荠的贮藏期。

摘  要:
【Objective】Effect of nisin on corm rot and quality of water chestnut during storage were investigated in order to provide technical support for prolonging the storage period of water chestnuts.【Method】Postharvest water chestnuts were used as materials. Stored under cold temperature(6±1)℃ and humidity 40%-60%,washing or muddy water chestnut with soaking 0.03% nisin for 5 min were set as treatments(T1 and T2),and washing or muddy water chestnuts without nisin treatment were controls(CK1 and CK2). The total plate count,rotted rate,total soluble solids(TSS)content,malondialdehyde(MDA)content,peroxidase(POD)activity,superoxide dismutase(SOD)activity and phenylalanine ammonia lyase(PAL)activity of water chestnut were investigated during the trial period.【Result】The results showed that for muddy or washed water chestnut,nisin treatment could slow down the increase of total plate counts and rotted rate,and prevented the rot of water chestnut during storage,delayed the decline of TSS content and accumulation of MDA content,and inhibited the rapid increase of activities of POD,SOD and PAL. Among them,nisin treated washed water chestnuts still had good quality on day 100 of storage. Compared with CK1 and CK2,total plate counts reduced by 36.84% and29.41%,rotted rates reduced by 77.09% and 79.29%,TSS contents increased by 75.00% and 69.00%,MDA contents reduced by 34.59% and 33.81%,POD activities reduced by 17.14% and 20.87%,SOD activities increased by 45.68% and71.61% and PAL activities reduced by 25.17% and 28.93% respectively.【Conclusion】The occurrence of rot disease and the decline of quality during the storage period of water chestnut are inhibited by nisin,thus extending the storage life of water chestnut.
