蛋白酶抑制剂对苜蓿绿汁发酵液中蛋白降解的影响

摘  要:
利用苜蓿绿汁发酵液模拟苜蓿青贮发酵过程,通过在苜蓿绿汁发酵液中添加4种蛋白内切酶抑制剂和5种外切酶抑制剂来探讨不同蛋白酶抑制剂对苜蓿青贮中蛋白降解的抑制作用。结果表明,苜蓿绿汁发酵液在发酵14d后,与对照组相比4种内切酶抑制剂(丝氨酸蛋白酶抑制剂、天冬氨酸蛋白酶抑制剂、金属蛋白酶抑制剂和半胱氨酸蛋白酶抑制剂)各自均能显著降低苜蓿绿汁发酵液中非蛋白氮(NPN)的含量(P<0.05),而且金属蛋白酶的抑制效果最好;5种外切酶抑制剂处理后,羧基肽酶抑制剂、二肽酶抑制和三肽基肽酶抑制剂处理组NPN的含量显著低于对照组(P<0.05),其中二肽酶抑制剂处理组NPN含量最低;而氨基肽酶抑制剂和二肽基肽酶抑制剂处理组发酵液NPN含量与对照组相比差异不显著(P>0.05)。

摘  要:
The study was conducted to evaluate the effect of 4endo-proteases and 5exo-proteases on proteolysis of ensiled alfalfa by fermentation of alfalfa green juice to imitate alfalfa ensiling procedure.The results showed that after 14 dof fermentation,each endo-protease inhibitor could effectively reduce nonprotein N(NPN)in fermented alfalfa green juice as compared to the control(P<0.05),and lowest NPN was observed in metallo-protease inhibitor treatment.With respect to the five exo-protease inhibitor treatments,lower NPN concentrations were observed in carboxypeptidase,dipeptidase and tripeptidyl-peptidase inhibitor treatment in comparison to the control treatment(P<0.05),and lowest NPN was detected in dipetidase inhibitor treatment;whilst no difference(P>0.05)was observed between the control treatment and aminopeptidase or dipeptidyl peptidase inhibitor treatment.
