蛋黄油脱色工艺研究

摘  要:
以水酶法提取的蛋黄油为原料,选择活性炭与活性白土为脱色剂,对蛋黄油脱色工艺进行优化。在单因素试验基础上,通过正交试验确定蛋黄油脱色的优化工艺条件为:活性炭与活性白土比例2︰1,脱色剂添加量5%,脱色温度70℃,脱色时间30min。在此条件下,蛋黄油的脱色率可达42%以上。

摘  要:
Yolk oil is obtained with aqueous enzymatic extraction as the raw material for the study of optimum decoloration technique with active carbon-activated clay as the decolorizer. The orthogonal experiment reveals the optimum decoloration technique for egg oil is as follows: the ratio of activated carbon and carclazyte selected for the bleaching adsorbent is 2∶1, the amount of decoloring agents accounts for 5%, the decoloring temperature is 70 ℃, the lasting period is 30 min, and under such conditions the decoloration rate is above 42% .
