基于创新能力培养的食品化学实验教学模式改革与实践

摘  要:
食品化学是食品科学的基础学科,而食品化学实验课集综合性和技术性于一体,对培养学生的创新能力和学科素养具有重要的作用。培养学生的创新能力是高校教学工作的重要目标。在食品化学实验课教学模式改革中,笔者提出了以设计性实验教学方法为切入点的新的教学模式,探讨了设计性实验教学的方法和内容,强调加大实验室开放的力度,并对改革的效果进行了调查。结果表明,设计性实验教学模式对提高学生的创新能力、解决实际问题、团队协作能力等综合素质起到积极作用。

摘  要:
As one of the basic disciplines of food sciences,"Food Chemistry Experiment" plays an essential role for cultivating students' innovative ability and specialized quality through integrating comprehensiveness and technical skills.Keeping in mind that the innovative ability training is one of important goals for higher education,in this paper,the author put forward a design-based experiment teaching approach to "Food Chemistry Experiment" with a description of methods and content,the suggestion of opening the lab and an evaluation on the teaching outcome.The results showed that the design-based experiment teaching approach had a positive influence on the training of students' all-round qualities,especially innovative,problem-solving,term work coordinating abilities.
