金属离子对黑果小檗色素稳定性的影响

摘  要:
[目的]探讨黑果小檗色素的稳定性。[方法]选择了不同浓度的8种金属离子检测黑果小檗色素的稳定性。[结果]试验得出,Ba2+、Al3+对黑果小檗色素具有护色作用;Ca2+、K+和Na+具有增色作用;Fe3+、Pb2+和Cu2+有减色作用。8种金属离子均随浓度的增加,色素稳定性有所降低。[结论]黑果小檗色素是一种较稳定的药食兼用色素源,可进一步开发利用。

摘  要:
[Objective] The stability of Berberis heteropoda pigment was discussed.[Method] For investigating the stability of pigment of B.heteropoda,eight metal ions of different concentration were selected.[Result] The Ba2 + and Al3 + had protecting color function.The Ca2 +,K+ and Na+ had an effect on colour increasing,while the Fe3 +,Pb2 + and Cu2 + had an effect on colour decreasing.With the concentration of metal ion increasing,the stability of pigment decreased.[Conclusion] B.heteropoda pigment is a kind of stable drug-edible material which can be worthy of further research and utilization.
