酵母抽提物是集营养、调味和保健为一体的新一代天然高级调味料。本文主要对酵母抽提物的定义、营养特性、在肉制品中的作用及机理做了详细的叙述;最后,对酵母抽提物的研究现状及其应用做了重点探讨。

摘  要:
Yeast extract is a new generation of high-level natural sauce with a set of nutrition, health and seasonings.In this article,the definition, nutritional characteristics, the role in meat products and mecha-nism of yeast extract were depicted in detail;at last, the research of yeast extract and its application were discussed.
