梅花鹿鹿茸和花马杂交F1代鹿茸营养成分比较分析

摘  要:
为比较梅花鹿茸和花马杂交F1代鹿茸营养成分(常规成分、元素含量、氨基酸含量)的差异,为鹿茸的加工和利用提供理论依据,试验采用凯氏定氮法、高温干燥法、灼烧法、索氏提取法、分光光度法分别测定两种鹿茸的蛋白质、水分、灰分、粗脂肪、磷脂含量;采用原子吸收光谱法结合分光光度法测定Ca、P、Na、K、Mg、Fe、Zn、Mn、Cu等无机元素的含量;采用电感耦合等离子体质谱法测定As、Pb、Cd、Cr、Hg等元素的含量;采用氨基酸分析仪结合分光光度法测定两种鹿茸氨基酸的含量。结果表明:梅花鹿鹿茸粗灰分含量极显著高于花马杂交F1代鹿茸(P<0.01);梅花鹿鹿茸总磷脂含量显著高于花马杂交F1代鹿茸(P<0.05);梅花鹿鹿茸K、Mn、Fe、Cu、Pb、Cd、组氨酸含量极显著低于花马杂交F1代鹿茸(P<0.01);梅花鹿鹿茸Na、Hg、甲硫氨酸含量显著低于花马杂交F1代鹿茸(P<0.05);梅花鹿鹿茸中必需微量元素总含量和重金属元素总含量低于花马杂交F1代鹿茸,梅花鹿鹿茸总氨基酸含量高于花马杂交F1代鹿茸氨基酸含量,但差异不显著(P>0.05)。说明花马杂交F1代鹿茸具有和梅花鹿鹿茸相似的营养成分,有较高的研究利用价值。

摘  要:
In order to compare the differences in the nutrient compositions(conventional composition, element content, and amino acid content) between sika antler and hybridization of Sika Deer and Wapiti, and to provide a theoretical basis for processing and utilization of pilose antler, the protein, moisture, ash, crude fat and phospholipid contents of two kinds of pilose antler were determined by Kjeldahl method, high temperature drying method, burning method, Soxhlet extraction method, and spectrophotometry, respectively; the contents of inorganic elements(Ca, P, Na, K, Mg, Fe, Zn, Mn and Cu)were determined by atomic absorption spectrometry combined with spectrophotometry; the contents of As, Pb, Cd, Cr and Hg were determined by inductively coupled plasma mass spectrometry; the amino acid contents of the two velvet antlers was determined by amino acid analyzer combined with spectrophotometry. Results: The crude ash content of sika deer antler was significantly higher than that of hybridization of Sika Deer and Wapiti(P<0.01), and the total phospholipid content of sika deer antler was significantly higher than that of hybrid F1 generation Deer and Wapiti(P<0.05). The content of K、Mn、Fe、Cu、Pb、Cd and histidine in sika deer antler in the sika deer velvet was significantly lower than that in hybrid F1 generation(P<0.01). The content of Na、Hg and methionine in sika deer antler was significantly lower than that of Hybridization of Sika Deer and Wapiti(P<0.05), the essential trace elements and heavy metals of sika deer antler were significantly lower than those of hybrid F1 generation(P<0.01). The total amino acid contents of sika deer antler were higher than that of F1 hybrid pilose antler, but the difference was not significant(P>0.05). Conclusion: The F1 generation of sika deer and wapiti hybrid velvet antler has similar nutritional components with sika deer antler and has high research value.
