山西老陈醋中总多酚和总黄酮测定方法研究

摘  要:
分析了Folin-Ciocalteu法测定山西老陈醋中总多酚含量、Al(NO3)3-Na NO2-Na OH体系比色法测定山西老陈醋中总黄酮含量的条件。通过单因素试验得到了总多酚和总黄酮的优化试验条件,并根据稳定性、重现性、精密度、加标回收率试验对方法进行评价。结果表明2种测定方法简便、快速、准确、可靠,可用于山西老陈醋及其他食醋产品中多酚和黄酮的测定。

摘  要:
The suitable conditions of determination of the content of total polyphenols in Shanxi aged vinegar using Folin-Ciocalteu method, the content of total flavonoids in the Shanxi aged vinegar using Al(NO3)3-Na NO2-Na OH colorimetric method were studied. The optimum experimental conditions were obtained by single factor experiment. The stability, reproducibility, precision, recovery rate test were employed to evaluate the experimental method. The results showed that two kinds of method were simple, rapid, accurate and reliable, which could be used for determination of polyphenols and flavonoids Shanxi aged vinegar and other vinegar products.
