超高压技术提取的花生壳多酚的抗氧化活性

摘  要:
采用超高压提取技术对花生壳多酚进行了提取,测得的提取率为7.1 mg/g。以维生素C和特丁基对苯二酚(TBHQ)2种常用抗氧化剂为对照,测定了花生壳多酚的抗氧化能力。结果表明:在质量浓度为1 mg/mL时,其对羟基自由基的清除率达到69.1%,还原力为0.364,抗脂质体活性为82%,对DPPH自由基的清除率为68.5%。而相同浓度的维生素C与TBHQ对羟基自由基的清除率分别为57.3%,37.9%,还原力分别为0.959,0.396,抗脂质体活性分别为19.4%,19.8%,对DPPH自由基的清除率分别为96.1%,94.4%。可以认为超高压提取的花生壳多酚有很好的清除自由基能力和抗氧化活性。

摘  要:
In this study,a novel technology,ultrahigh pressure extraction,was employed to distill the polyphenol from peanut shell.By using this technology,the extraction rate of peanut shell polyphenol is 7.1 mg/g.The antioxidant activity of the polyphenol was measured by companying with Vitamin C and TBHQ.The experimental results show that the ratio of scavenging activities to OH-is 65.2%,the reducing power is 0.191,the ratio of antioxidant activity by liposome model systems is 61% and the DPPH radical scavenging ratio is 55.5%,with the concentration of peanut shell polyphenol of 1 mg/mL.To Vitamin C and TBHQ,the ratio of scavenging activities to OH-is 57.3% and 37.9%,the reducing power is 0.959 and 0.396,the ratio of antioxidant activity by liposome model systems is 19.4% and 19.8% and the DPPH radical scavenging ratio is 96.1% and 94.4%,respectively.These results indicate that the peanut shell polyphenol which distilled by ultrahigh pressure extraction has a good antioxidant activity.
