饲喂蚯蚓液对公番鸭肌肉品质的影响

摘  要：
试验旨在探索蚯蚓液对公番鸭肌肉品质的影响。选用180只1日龄公番鸭,用单因子试验设计,随机分成3组,每组3个重复,每个重复20只,各组分别饲喂添加蚯蚓液0%、1.5%、2.5%的基础饲粮,试验期70 d。结果表明:(1)添加蚯蚓液对番鸭胸肌肉水分、粗灰分、粗蛋白、粗脂肪均没有显著影响(P>0.05);但2.5%蚯蚓液组水分、粗脂肪含量要低于空白对照组(P>0.05);(2) 2.5%蚯蚓液组胸肌肉18种氨基酸总量、8种必需氨基酸、7种风味氨基酸含量均高于空白对照组(P>0.05);(3) 2.5%蚯蚓液能够明显提高亚麻酸(P<0.01)、二十碳二烯酸(P<0.05)、二十碳三烯酸(P<0.05)、花生四烯酸(P<0.05)的含量,降低十四碳酸的含量(P <0. 05),其中多不饱和脂肪酸是空白组的1. 89倍(P>0.05),必需脂肪酸是空白组的1.76倍;(4) 2.5%蚯蚓液饲喂番鸭后番鸭胸肌肉重金属含量符合食品安全标准;(5) 1.5%蚯蚓液组对番鸭胸肌肉品质没有显著影响。因此,2.5%蚯蚓液饲喂番鸭能够改善肉质。

摘  要：
In order to explore the effect of earthworm liquid dietary on the muscle quality of male Muscovy ducks,the author conducted a single-factor test for 180 heads of 1-d-old male Muscovy ducks for 70 d. These ducks were randomly divided into 3 groups,each group included 3 repetitions,and each repetition included 20 heads of ducks. The different groups of ducks were fed respectively by the basic diets containing 0%,1. 5% or 2. 5% earthworm liquid. The results showed:( 1) Adding earthworm liquid into the basic diet had no significant influence on the contents of moisture,crude ash,crude protein and crude fat in pectorales of male Muscovy ducks( P>0.05),but the contents of moisture and crude fat in the 2.5% earthworm liquid group were lower than those in the blank control group( P>0.05);( 2) The total contents of 18 kinds of amino acids,8 kinds of essential amino acids and 7 kinds of flavor amino acids in the pectorales of male Muscovy ducks in the 2.5% earthworm liquid group were higher than those in the blank control group( P>0.05);( 3) Adding 2.5% earthworm liquid into the basic diet could significantly enhance the contents of linolenic acid( P<0.01),eicosadienoic acid( P < 0. 05),eicosatrienoic acid( P < 0. 05) and arachidonic acid( P<0.05),but also could significantly reduce the content of fourteen carbonate( P<0.05),and the content of polyunsaturated fatty acids and essential fatty acids in the 2. 5% earthworm liquid group was respectively 1. 89 times( P > 0. 05) and 1. 76 times that in the blank control group;( 4) The content of heavy metal in pectorales of male Muscovy ducks in the 2.5% earthworm liquid group was in line with the food safety standard;( 5) Adding 1.5% earthworm liquid into the basic diet had no significant effects on the breast muscle quality of male Muscovy ducks. So,adding 2.5% earthworm liquid into the basic diet for male Muscovy ducks can improve their breast muscle quality.
