精制玉米蛋白粉包埋DHA的研究

摘  要:
对精制玉米蛋白粉包埋DHA(docosaheraenoicacid)进行单因素试验 ,得出了鱼油粉末化较为理想的乳化液工艺参数 :乳化剂的HLB值大于 9 6 ,添加量 1 5 %~ 2 5 % ,乳化温度 6 0℃~ 80℃ ,水分的添加量为70 %~ 75 % ,比较理想的DHA和精制玉米蛋白粉的比例为 1∶(3~ 5 )。

摘  要:
The process of embedding DHA using refined maize protein powder was studied. The reasonable technological parameters of emulsion during fish oil being powdered were obtained. HLB of emulsifier is more than 9.6; its addible quantity is 1 5%~2 5%;temperature of emulsifying is 60℃~80℃; addible quantity of moisture is 70%~75%.Refined maize protein powder was proved to be the suitable material.
