屠宰过程中猪蹄、头脱毛技术的研究

摘  要：
作者针对畜类屠宰加工中猪头、蹄等部位的小毛难以去除问题,从生产成本、脱毛率、使用方便性、安全性等方面对几种食品级粘合剂进行了筛选。结果表明,食品级松香甘油酯、食品级石蜡、动物油脂比例为85∶10∶5时脱毛效果最佳,且具有脱毛率高、安全无毒、使用方便等特点。

摘  要：
How to depilate the pork trotter and hog face entirely through the slaughtering process was a difficult problem,several depilatories permitted using in food industry were selected for studying on their depilating effect,using convenience and security.The results indicated that the best depilation effect could be obtained when the mixed depilatories were composed of glycerol ester of partially hydrogenated gum rosin,paraffin,creature lipid with the proportion 85∶10∶5.And it was safe,innocuous,using expediently,also had high depilation rate.
