我国白酒品质及酒龄检测现状

摘  要:
我国白酒的品质及酒龄检测是控制白酒质量的重要手段。总结了白酒品质检测与酒龄鉴定的几类方法,探讨了感官鉴定与常规仪器检测存在的问题,而近几年逐渐兴起的电子鼻跟电子舌技术则综合了感官鉴定跟常规仪器检测的优点,有望解决这一难题。

摘  要:
Quality and age detection of Chinese spirits is an important means to control the liquor quality,this paper summarizes several kinds of methods for detection of liquor quality and identification of liquor age,discusses existing problems of sensory evaluation and conventional instrument detection. In recent years,the emerging electronic nose and electronic tongue technology possess the advantages of the both,that is expected to solve this problem.
