不同方法对大鲵不同部位的蛋白质含量测定

摘  要:
采用考马斯亮蓝法、紫外分光光度法、福林—酚试剂法,对人工养殖大鲵(Andrias davidianus)的前胸、中胸、尾部的背部及腹部肌肉的蛋白质含量进行了测定。结果表明,大鲵肌肉中不同部位的蛋白质含量存在差异,考马斯亮蓝法、紫外分光光度法、福林—酚试剂法均测得大鲵中胸腹部肌肉的蛋白质含量最高,分别为214.58、219.20、251.41 mg/g;在尾腹部最低,分别为88.05、85.71、105.28 mg/g。尽管3种方法含量测定存在差异,但其均显示蛋白质含量在大鲵体中分布为中胸>前胸>尾部。

摘  要:
In order to provide basic information for the further utilization of Andrias davidianus resource, the protein content in the muscle of the front chest,middle chest and tail(backside and abdomen) in farmed salamander was determined by different methods(Coomassie brilliant blue method,Ultraviolet Specterphotometry and Folin-phenol reagent method).The results showed that there was significant difference among the different part of the salamander, and the protein contents were highest in the middle chest-abdomen tested by all of the three methods, with the values of 214.58(Coomassie brilliant blue method),219.20(Ultraviolet specterphotometry) and 251.41 mg/g(Folin-phenol reagent method), and the lowest content were in tail-abdomen, with the values of 88.05,85.71 and 105.28 mg/g. Although different methods had different values on the protein content, all the tests showed that the distribution of protein in salamander was middle chest > front chest > tail.
