概述了湖南黑毛茶初制加工现状及黑毛茶加工过程中清洁化生产的基本要求,分析了黑毛茶渥堆过程中存在的受主观因素影响、渥堆时间难以控制和渥堆条件无法量化等问题。阐述了黑毛茶清洁化生产的基本要求和必要性,提出应合理使用和维护加工设备的建议,有助于企业进一步改进生产工艺,实现生产过程清洁化自动化,生产出安全优质的黑毛茶。

摘  要:
This paper summarized the status of Hunan raw dark tea primary processing and the basic requirements of clean production in the process of raw dark tea. There were some problems in the process of black tea pile. Influenced by subjective factors, it was difficultly to control pile fermentation time and quantify the pile fermentation conditions. Based on this, the necessity and main measures for cleaner production of raw dark tea was put forward. It suggested that the processing equipment should be properly used and maintained, which would help enterprises to further improve the production process, to achieve cleaner production process automation and produce safe and high quality raw dark tea.
