摘  要:
黑毛茶渥堆发酵是湖南黑茶的关键工艺,直接影响其品质风味。但传统的黑茶渥堆发酵场地设施过于简陋,卫生质量难以保证。为解决这一问题,本文对湖南黑毛茶生产过程中渥堆发酵机械化生产进行探索性研究。

摘  要:
Maocha pile fermentation is the key processing of Hunan Dark Tea, which directly influenced its flavor and taste.Traditional dark tea pile fermentation was conducted in over-simple and humble sites, which can not ensure the sanitary requirement. To solve this problem, this paper studied the mechanization pile fermentation of Hunan Dark Tea maocha.
