苦荞麦苗提取物微胶囊化固体饮料的研制

摘  要:
应用微胶囊技术,以苦荞麦苗为主要原料,研制了富含芦丁(生物黄酮)的青苗固体保健饮料。通过单因素实验和正交实验,得到最佳工艺配方为:β-CD1.5%,柠檬酸7.0%,碳酸氢钠8.0%。同时对其生产工艺、β-CD包埋、技术关键进行探讨。

摘  要:
With the microencapsulation techniques,the health solid seedling drink rich in rutin (bioflavonoid) was extracted from tartary buckwheat and studied. Through single-factor and orthogonal experiment design,the optimum technological recipe was obtained,namely,β-CD1.5%, citric acid 7.0%,sodium bicarbonate 6.0%. The production technology,β-CD application and key techniques were also discussed in this paper.
